1/2 red onion, chopped
1 can black beans – rinsed and drained
1 cup corn
1 cup uncooked quinoa
6 cups chopped de-stemmed kale
1 clove minced garlic
1/2 teaspoon cumin
1 teaspoon maple syrup
1/4 cup fresh cilantro, chopped
1/4 cup hot sauce of your choice
1/4 cup fresh lime juice
1/4 cup water
sea salt and pepper
Use a medium-sized pot to bring to boil 2 cups of water combined with 1 cup of quinoa.
Adjust the heat to lower it down. Cover the pan and allow to simmer for 15 minutes or until quinoa has absorbed just water.
Add the kale and the onion in a large salad bowl.
Add in the black beans and corn to the mixture.
Add the cooked quinoa over the kale-onion-black beans mixture.
Prepare the dressing.
