Dip Ingredients
½ cup finely chopped dill
Avocado dip base
Fritter Ingredients
¼ teaspoon of pepper
¼ teaspoon Onion powder
1 teaspoon salt
1 tablespoon zest of lemon
¼ cup gluten-free flour
¼ Cup fresh basil
¼ cup fresh oregano
1 clove of garlic (peeled and minced)
Zucchini – 1 large or 2 small
2 organic eggs

Instructions
Grate the zucchini using the large holes of a box grater.
Put zucchini in a colander set in the sink and add 1/2 teaspoons salt to taste.
Allow it to stand for 10 minutes, then using a clean kitchen towel, remove excess moisture from the zucchini.
Put the zucchini in a large bowl. Add and mix gently the basil, egg, garlic, lemon zest, onion powder, oregano, salt and pepper.

Add flour slowly, with constant stirring to avoid lumps from forming.
In a big sauté pan, heat 2 tablespoons coconut oil over medium-high heat. Saute gently until the oil sizzles. Drop a just enough amount of the zucchini mixture, make sure that there is enough space between each fritters.
Cook fritters for 2 to 3 minutes or until golden brown.
Lower the heat to medium then turn fritters to cook the other side until it is also golden brown. Transfer the cooked fritters to a plate and set aside in a warm place.
Repeat until all zucchini are cooked. Add more oil to pan if necessary.
If you want more veggies on your mixture, you can try adding ½ cup of finely chopped spinach or kale!
