LOW-Carb Cauliflower & Kale Frittata Recipe 🍲 For Your Spanish Flavor Cravings

1 small onion
3 cloves garlic
½ teaspoon salt
½ teaspoon ground pepper
1 teaspoon chopped fresh thyme
2 tablespoons extra-virgin olive oil
¼ cup of water
2 cups small cauliflower florets
5 cups chopped kale
8 large eggs


Place a rack in the upper third level of an oven and preheat broiler to high.
In a large-sized cast-iron skillet, heat at medium flame 1 tablespoon oil.

Add onion and cook while stirring occasionally for 2 to 4 minutes or until the onion starts to brown.
Add the cauliflower and water, and allow to simmer by covering the skillet for about 6 minutes.

Add kale, garlic, thyme and a ¼ teaspoon each salt and pepper.
Allow to simmer again for 2 to 3 minutes or until the kale is wilted.

In a large bowl, whisk eggs, paprika, and the remaining ¼ teaspoon salt and pepper.
Add the vegetables to the egg mixture by gently stirring to combine.

Wipe the pan clean and add the remaining 1 tablespoon oil and allow to heat over medium flame.
Pour in the egg mixture and top with cheese.

Cover and cook for 4 to 5 minutes or until the edges are set and the bottom is brown.
Transfer the pan to the oven and broil for 2 to 3 minutes or until the top of the frittata is just cooked.
