And what about mushrooms? They are neither animals nor plants, but form their very own kingdom. Accordingly, they should also have a completely different nutrient composition. Are mushrooms suitable in the keto diet?

Mushrooms are ketogenic because they have few carbohydrates and calories. With just 2.3 grams of net carbohydrates per 100 grams of mushrooms, a person would need to eat about 870 grams of mushrooms to exceed the daily recommended daily allowance set by experts.

Why mushrooms are suitable in a ketogenic diet

As mentioned above, the goal of a keto diet is to reduce carbohydrates in order to enter the state of ketosis. To understand in more detail why mushrooms in particular are such a keto-friendly food, we should first clarify how much carbohydrates may be consumed in the first place.

Unfortunately, I can’t give you a definite answer to this. It all depends on how efficiently your metabolism works. You often hear about numbers like 20g, 30g, 50g or 5%. But the fact is that there is no number that is set in stone and is valid for every person. For some people, a diet with 25g of carbohydrates is keto, while others might even consume 60g daily.

Experts recommend limiting yourself to a daily intake of 20 grams of net carbohydrates and splitting it over 3 meals. This amount allows just about anyone to be put into ketosis.

Net carbohydrates, by the way, describe the carbohydrates that, unlike complex carbohydrates, have a greater impact on blood sugar levels, which is why we should focus mainly on them in the keto diet.

You can easily calculate the net carbohydrates relevant to the keto diet by subtracting the fiber and sugar alcohol content from the total carbohydrate content of a food. The whole thing sounds much more complicated than it actually is. Here is an illustrative example with a mushroom: the white mushroom.

100g white mushrooms have on average

  • 22 kilocalories
  • 3.2 grams of total carbohydrates
  • 1.0 grams of dietary fiber
  • 2,4 grams of net carbohydrates

So, to arrive at the net carbohydrates of the mushrooms, we simply subtract the dietary fiber (1.0g) and sugar alcohols (n.v.) from the total carbohydrates (3.2g) and get 2.4 grams of net carbohydrates in this case study.

2.4 grams is a fabulous value in the ketogenic diet. For comparison, 100 grams of apples have 11.3 grams, green peas have 8.5 grams, red peppers have 3.8 grams, and spinach has 1.3 grams of net carbohydrates. You can see why mushrooms are so great in this diet.
